Breakfast Rice

I shared this photo for yesterdays You Capture, and today I though I would share the recipe. It’s really simple to make, I make a batch that lasts 3-4 days so I don’t even have to think about breakfast, but I get a good healthy start to the day.

Breakfast Rice.

  • 3/4 cups sliced dried apricots.
  • A few peelings of lemon rind.
  • 1 cinnamon stick.
  • 3/4 cups apple or pear juice.
  • 2-3 cups cooked brown rice.
  • 1/3 cups almonds or walnuts, roughly chopped.

Optional extras.

  • 2-3 whole cloves.
  • 1 star anise.
  • 1-2 cardamom pods.

Simmer the chopped fruit, rind, cinnamon stick and any other spices you choose to use in the juice for a few minutes. Add the rice, simmer for a few more minutes. Turn off the heat and stir in the nuts and let stand for ten minutes.

Store in a container in the fridge. To serve, pour a little soy/rice milk on the rice and heat in the microwave for 90 seconds, and top with yoghurt if desired.

Easy and delicious!
